I'll advocate something completely different: Waxed canvas. I've steered 
away from nylon in the field. It always makes noise, a spark from a fire 
melts through it, and it holds odors. I have loved my waxed canvas 
Toursacks, and have now switched to Frost River's waxed canvas for both my 
saddle bag and panniers (and a few others). Great for everything so far 
(day rides, grocery getting, errand running). Looking forward to putting 
them through the paces bikepacking. All signs from my use so far say two 
thumbs up.
