I understand your reluctance to use an "off-label" setup if you're not 100% comfortable/knowledgable.
But 3 x 10 bar-end shifters and downtube shifters are still in production, as are 9-speed MTB rear derailleurs (the M772 I mention is sold by Riv <http://www.rivbike.com/product-p/d20xt.htm>). It's really just as simple as using the 9-speed MTB RD with the remainder of your desired 10-speed parts (chain, cassette, shifters). But 3 x 9 is a great setup as well. Just trying to help you make a fully-informed decision.
