Addison: That is a beautiful build. Nothing like a full tear down to allow you to clean all those hard to reach places.
One question: you mention 26 lbs weight (carbon assisted, chuckle). Seems kinda light, if that includes the rack & basket. I recall weighing my 58 cm Atlantis one time while re-assembling after a trip, and getting something like 26-27 lbs before I put on any racks. It would have had 35-40 mm road touring tires. An old Rivendell flyer or reader mentioned the Atlantis F&F was roughly a pound more than their other bikes of comparable size. On the fender question, it looks great as-is. Given that you have fendered bikes, I'd keep it as-is. Just pulled the fenders off my Atlantis after El Nino decided to pass us by.
