What are you trying to do, just rip CDs into digital files?

I still use iTunes because the OSX alternatives I tried don't sound as good 
using my digital streaming/DAC/stereo setup. I agree that iTunes is a bit 
ogre-like at times, but I always reluctantly come back to it.

It's probably outdated information as I have been using it for years, but 
for converting formats, and for ripping outside of iTunes, I use XLD (now 
called X Lossless Decoder 
<http://www.macupdate.com/app/mac/23430/x-lossless-decoder>). Don't know if 
it's Linux compatible.

As you can imagine, there's a ton of discussions about iTunes and its 
alternatives on computer audio sites - probably your best bet.
