I will pile on and agree with the sentiment that if 100 dudes exactly your size walked in to buy Hunqapillars, some would definitely get a 58 and some would definitely get a 62.
I'm 5'11" and I absolutely should be on a 54. I've ridden it and it's awesome. I've tried standing over the 58 and it's right there. I mean, right there. But I've ridden that, too, and it is also awesome. If somebody took away all my bikes and told me I had to get by with two Hunqapillars for the rest of my life, one a 54 and the other a 58, I absolutely could do it. The bigger of the two sizes screams for Albatross or Bosco handlebars. The smaller of the two would probably be better with straight bullmoose, for MTB riding, or Noodles for a more roadish approach. Maybe a dirt drop with Noodles or flared drops could balance your road vs offroad stuff.
