If it's a cassette rear wheel, this conversion kit is inexpensive and works 
fine:

If it takes a freewheel, there are plenty of cheap single freewheels 
available at your LBS. As Patrick said, you can use the existing crank with 
just the middle ring if you get shorter bolts.
