Chris I admire your commitment to the single handlebar, I wish I could get 
myself to agree on one!  

For shifters have you thought about thumbies?  I did a pair of thumbies on 
my GAP trip w/ the purple-luki and liked it pretty well.  I mounted them 
close to the stem.  Granted I didn't shift a whole lot and the particular 
SIS thumbies I used are pretty unappealing but it is a configuration I'd 
consider again.  It did minimize the shifter cable run if that matters to 
you.  Picture below.

When I reconstitute the Saluki I'm leaning towards albatross with 1x8 so a 
right hand paul thumbie mounted silver shifter in the conventional (close 
to the hand grip) location.
