My curousity beat my "who cares?" attitude.  58 cm Atlantis, pretty 
standard Rivendell build (Brooks, Sugino triple, etc), with Soma C-lines on 
Mavic A-719 rims, Tubus Cosmo rear rack & small Nitto front, Acorn boxy bag 
with usual assortment of junk:  36-1/2 lbs.(dry; no water).  Since I had 
the scale handy I weighed the Acorn bag alone @ 5 lbs.

To get under 30 lbs would mean giving up a lot of utility (not my 
kickstand!).  Ain't gonna happen.  Still, this is a fun exercise every once 
in a while.  IIRC, my bike always gains weight.  

Just weighed my wife's 47 cm Atlantis:  30 lbs as she usually rides it:  
Riv built plus kickstand, cheap aluminum rack with REI trunk bag, and small 
Acorn handlebar bag.  Without the trunk bag, 27 lbs.  32 hole wheels 
w/Compass tires.  Can't recall the seat but it's not a Brooks, something 
lighter.
