Jason- SKS recommends their P55 for 26 x 1.75 tires. Available in silver or black. But the P55s are standard length, not longboard, and come with no mudflaps.
You could probably make longboard P45s work, but it may be tricky to get a good fender line. You'd be reducing the fender radius a bit (P45s are designed for midsize 700c tires). That said, I used P45 longboards over some 650 x 38b tires, and they fit pretty damn perfectly. The radius of 650b/584 is more than half the distance between 700c/622 and 26"/559, on the small side. So, more than halfway to 26", and the fender line looks really good. YMMV.
