With an indexed system, the limit screws on the derailleur are largely
redundant.  NOT that I'm recommending ignoring the setting, but that the
shifter actually determines the range of the derailleur.  Of course, if the
cable slips or shifter fails, it could introduce dangerous slack into the
system.

I still set up the limit screws first, before a chain is installed.

Sprocket spacing difference on standard 6 to 7 is 5.3 to 5.0 mm's, which may
be unnoticeable. But, the 7 sprocket, 8 speed shifter hack has been done
many times.
