Hi Dave,
I strongly believe that part of what makes a bike beautiful is having it 
adjusted to your own personal riding needs, comfort, and preferences.  I 
think it would be a shame for your wife to not have the handlebars she 
finds suitable for her riding style simply because they wouldn't have a 
certain 'look'.  A bike is a marvelous personal machine, and tweaking 
that machine to perfectly serve one's own needs is true beauty.
I say go for it, and the hell with fashion!   :)
