Along comes the Grinch... all things considered, it's unlikely that you'd really feel a difference between wheels (assuming properly built wheels), except for fairly large weight differences. The vertical flex of bike wheels in the load affected zone is on the order of the thickness of a sheet of paper. Individual differences between tires would overwhelm any differences between the road feel of different wheels in terms of ride smoothness. Weight differences could be noticeable if the difference is large enough. I would doubt that 50-100 grams would be noticeable.
Hubs can be obviously different when spinning the axle with your fingers. Are they noticeable in how they feel when riding? I have doubts although I wouldn't rule it out entirely.
