The mail clients are probably auto-rewrapping the text when quoting  
it in a reply.  If someone wants a list to remain in list form when  
rewrapped, they have to put a blank line between the list items:

Item 1

Item 2

Item 3

rather than:

Item1
Item2
Item3

which would rewrap to:

Item1Item2Item3
