I would suggest the ess manual itself: http://stat.ethz.ch/ESS/ess.pdf and John Fox's document: http://socserv.mcmaster.ca/jfox/Books/Companion/ESS/ess-xemacs.pdf. Even though the latter deals with Xemacs on windows, it does has useful info about using (X)emacs + ess in general.
