Did you read "./configure --help"? It allows you to override the default "--scanner auto" - so that instead of installing support for every AV on your server, it'll only install support for the ones you explicitly list. Conversely, yes, you could allow Q-S to detect all your scanners, and then edit @scanner_array to remove the ones you don't want to call.
