I found the information in in Project -> Properties -> Transformations, as you 
suggested.

(I didn't know that tab existed and had been looking in Project -> Properties 
-> CRS)

Hi John,
you should find chosen datum transformation in "Settings -> Options -> CRS and 
Transforms -> Coordinate Transforms" and /or "Project -> Properties -> 
Transformations".
