These are the versions the QGIS developers officially support. If you're using debian or ubuntu, you can still install older versions from the officiall QGIS debian repository. > https://debian.qgis.org/debian/ If you need to stay on a particular version, you should put everything in a (docker) container, before updates to other libraries break your version of qgis-server. But for an internet facing service, this is inherently risky! However, for any bugs or security issues you encounter, you will be solely responsible, the QGIS developers will not accept a bug report for an obsolete version.
