You can use the Raster Conversion tool from GDAL in the graphic modeller, under 
the Advanced Parameters use the following   -co COMPRESS=JPEG

Subject: [Qgis-user] Saving a raster geopackage in the graphical modeller

I have a graphical modeller script that produces an rgb image of satellite 
imagery. I can only find options to output as a geotiff with LZW compression 
(using the Raster Conversion - save raster as in the EnMAP tools) in the 
graphical modeller algorithms. Is there a way to use JPEG compression or save 
as a geopackage to make the image files smaller when using the graphical 
modeller?
