Because the note says „yet“ i wonder if there is an older version of QGis
which has been verified by Apple?

it may be there is a misunderstanding here.
AFAIK the phrase means that currently the QGIS installer is not
notarized but may be it will be notarized in the future: i.e. "is not
yet notarized" means "is not notarized up until now".
