I had to test it out too, having wanted to do such things in the past and had 
to click on the midpoint to add anything for each new point (then drag to where 
it needs to be).

Adding to the END of line segments works perfectly fine when the + is selected. 
 Is there a similar function where any other point/vertex can be started from 
for both line and polygons and just click where you want the next vertex to be 
and not have to create and then move each new one?

I think that is what people are asking about/wanting – but I may just be extra 
confused now.  I didn’t know about clicking the + at the end of lines to 
continue those, so that was useful to find out.  Now just need to know if there 
is something exactly the same for every other vertex, not just ends of lines.  
:D

But perhaps that + in the middle of polygon segments is supposed to indicate 
the same thing, just that it doesn’t work the same way as at the ends of lines.

Also just noticed that the behavior of the central + when editing vertices of 
lines behaves differently than for polygons.  On polygons once you click the + 
the point is stuck there (and you have to click it again if you want to move 
it), but between points of lines when you click the + it remains selected and 
moves with the pointer until you click again.

It would be nice to be able to Ctrl/Shift/Alt/(something)-click that + between 
vertices and then continue adding to anything (line or polygon) until there is 
a right-click.

No, You don't need to reselect: Given an existing line, take the vertex tool, 
move close to an end point, click on the '+' and you can extend it with as many 
segments as you wish

The issue here, and I confirm Andreas' first message, is that the vertex tool 
ignores the tracing option, you need t click every new vertices.
Another issue I saw is that I spent a lot of time to find the tracing button: 
it's available on the snapping toolbar, but not on the snapping Options widget 
which opens (and I didn't enable the toolbar). I still have issues to 
understand why we need two interfaces for these options, with tools that are in 
one place and not in the other.

 I don’t do much vectorizing lately and in the past, used AutoCAD to do it. 
There must be some other way of doing it. Maybe there is a shortcut or 
something like the shift key we need to use.  I would check the user manual to 
see if there is an option under the vertex tool.  I see that lots of new tools 
have been added lately making QGIS a good contender for tracing.  I guess you 
could just create a new line and then merge both together.
