In one PyMOL instance you can load many structures. They can be load into different objects, or different states of the same object.
If you mean using one command line to load multiple structures, since its grammar is very similar to python, I think you can always use semicolon to separate two commands: fetch 1A00; fetch 1A07 this command will load both 1A00 and 1A07, but one after the other, not simultaneously.
