I am not sure if I got you right.
you can activate the sequence view, when you start pymol by putting
cmd.set('seq_view',1)
in your .pymolrc.py (pymol's config file).(or set seq_view, 1 in .pymolrc, as you like)If you however mean a function that takes a selection and returns a one letter code
