Yes, 1.8.5 will work with puppet 2.7.x. Here is a quick link to a supported ruby versions chart (http://docs.puppetlabs.com/guides/platforms.html#ruby-versions). 1.8.7 is better for various reasons, but 1.8.5 will work.
