It is a known problem. We've used Markdown to power the Wiki and some of the integration of Markdown into Redmine isn't perfect. I'm working to fix it the issues in the next little while. Ignore the preview for example - it's broken and tries to convert Markdown into something else and on my TODO list. In terms of Markdown format - ### and dashes and stars are all acceptable header and list formats. So different people will use different ways of doing H1, H2, H3 etc. Have a look at: http://daringfireball.net/projects/markdown/ for a more complete syntax.
