Can someone tell me what the process is of transfering my email folders from one pc to another? Thanks.

you can backup the evolution folder:
ie: cd to /home/'username'
tar cvf evolution_backup.tar evolution/
than copy the file evolution_backup.tar to the new computer and untar it: tar xvf evolution_backup.tar
