Sorry, misunderstood.  I think you are looking for the
/root/anaconda-ks.cfg file.

/boot/config* and those in /usr/src/linux-2.4/configs/* are exactly
those you want. And IIRC, Red Hat's cover that in the section on
building custom kernels.
