You can minimize them to get some screen real estate back. Then they act like a graphical menu instead of being in your face ugly all the time.
Right click on the Office icon in the upper left. I've not been able to get Word to save the save as older version since most of the other users here at the office are still on Office 2003, that's a bit annoying. Luckily I don't create to many Word documents. I've been using Office 2007 for about 5 months and I have to say I really hate the ribbon interface with a passion. By biggest gripe is that you need to use the mouse to do everything! You can't turn them off and they eat up tons of screen real estate. Office 2007 breaks just about GUI style guideline ever written, including Microsoft's own.
