Postfix doesn't show the date, your email client does. In Thunderbird, I just right-click the little column header, uncheck "Date," and check "Received." It will probably be different in other clients, but still possible. If it's *not* possible for some reason, you may still be able to strip the date header and have it replaced upon receipt, but I won't speak to the feasibility or advisability of that.
