I think that many of us who use a Linux distribution for our source of
Postfix might lean more on the Postfix web site vs any documentation
included in the sources.

The documentation on the website is identical to the current collection of README files and man pages distributed with the source code. With the advantage that the installed docs match the installed code, even with a distro like RHEL where code base versions stick for a long time.

To that end I would suggest a "shout out" on
the web site to understand the implications of using these settings:

maillog_file = /var/log/maillog
maillog_file_compressor = bzip2

Perhaps under item 2. in  the section labeled "Configuring logging to
file" on page https://www.postfix.org/MAILLOG_README.html,

        # locate MAILLOG_README
        /usr/local/share/doc/postfix/MAILLOG_README
        /usr/local/share/doc/postfix/MAILLOG_README.html
