what is defer and deferred? can i check bounced messages in any of the folders above?

It's unclear what you're asking for...

Postfix doesn't store bounced messages after they have been delivered.

Bounces waiting delivery are "normal" messages and will be in the active, defer or hold queue as appropriate.

Messages in the queue may be viewed with the "postcat" command. Generally:
# postcat -q QUEUEID
http://www.postfix.org/postcat.1.html

The text postfix uses when sending a bounce message may be changed by following the instructions here:
http://www.postfix.org/bounce.5.html
