Morgan provided a more detailed explanation in their response.  As a TLDR, I
have audio-channels=stereo on my mpv.conf, which is my player of choice.  Before
that, some movies with 5.1 or 7.1 had weird issues like dialogs only on the left
channel and some audio missing.
