They don't and can't. This is what's probably happening:
What happens is that the dock doesn't support volume control through the
standard interface, that's why it doesn't work in iPeng (iPeng should
grey that thing out, will have to check why it doesn't) and why Apple's
App hides the slider.

Then they have their own App which will communicate with the dock
through some proprietary Sony-specific communication protocol. As a
kludge they also let you browse the library to play music.

It's just a bad design by Sony, hate to say it....
