You will always have lag on any Bluetooth connection. That's why your
phone / speaker are out of sync with other devices. 
Try a 3.5mm cable between phone & speaker i.e. no bluetooth  - this may
improve things but still won't be perfect as the phone doesn't provide
the hardware environment that is necessary for proper sync.
While you should be able to get Pi's connected via WiFi to play
synchronised WiFi is, as you say, inherently unstable and never as good
as a hard wired solution.
