We buy new PC's but no harddisk.

You can set it up correctly to use all the ports on the termials but we dont
allow that here, Security..

You can also reduce the load from the server and have the browser actually run
on the local PC and the rest of the programs run on the server.

It is up to you to just configure the way you want. For a Cafe it may not be
worth the setup, but for us, Since we can control users, what applications
they can use and make sure all have the same versions at the same time.

Also backup purposes back up one machine.

Very good for corporates or schools, where you want the control.

Cafes better to make a ghost style image and bash it out when you need it.

Linux should be used in Cafes to really control the viruses and other junk you
get from surfing. Also using ssh in the cafe you can clean up and control
access from the head machine.

With LTSP the Learning curve is much higher than pure linux at the start as
well so using in a cafe is not a place I would advise. I have asked for a
demo of one of those two screen cheap devices for here in the office since it
would reduce our out lay by up to 30% on some staff stations.
