No, they don't use syslog for logging although I also need to copy the syslog logs to the USB flash drive. Logging with syslog is not an issue here because I can add a line in my /etc/syslog.conf to uncomment (to enable) or comment out (to disable) that said line for logging to my USB flash drive for example. And besides, it doesn't have any bad impact if I restart the syslog daemon, AFAIK. I can not just restart the main services here just to copy logs to the USB flash drive because these services involves SIP and related protocols and restarting such services will disconnect calls.
