The latest Debian stable (Etch) will install cleanly on an Apple Xserve G5 (the previous would after much voodoo followed by sprinkling blood of chickens...). Refer to the manual to boot the OpenFirmware boot console on the serial port (as the Xserve doesnt come with VGA/DVI output... unless you attach a graphics card via a riser). The rest is pretty much straightforward if you know OF. The Xserve is known to support booting from CD and USB drives.
