Yes, I, too, think, events dedicated to open source should use open source
for the talks and demos. This topic was discussed in PLUG also. For

The wisdom tech communities had in the 90s in creating open protocols that
made email so open, so that anyone can create own server, own email client
seems to be nowhere now. I do not know why people prefer proprietary
platforms that are restricted / confined under the hood of one technology
giant with no inter-operability.

Regarding people finding it `easy to use' and all that: whether email or
messaging application, they are just a form of asynchronous communication.
Nothing stops someone from building a `cool looking' email client with the
same so called `ease of use'.
