What version of libgnutls.so.30 (libgnutls30t64 or libgnutls30) is installed? Is it a local build? Or do you have a local build in /usr/local or the $LD_LIBRARY_PATH or similar? It's an indirect dependency via libcurl3t64-gnutls, so it doesn't appear in the reportbug report when reporting a bug against flatpak. At first glance this looks like it would have to be an ABI break in GNUTLS, affecting Flatpak indirectly. But I don't see any sign of this having happened in the gnutls28 packaging repository.
