What timezone is the server in relative to you? Perhaps it's just the mail form itself that misinterprets the time ... I encountered a similar issue when my host outsourced the hosting from his own server in the same timezone I'm in to a server 2 hours ahead of here ... I had to change the scripts on my site to offset the time zone
