i don't really understand your question.

for the extended headers in mail use something like this:

$to = "[EMAIL PROTECTED]";
$subject = "some subject";
$header = "content-type: text/html; charset=\"iso-8859-1\"\n".
    "from: \"[EMAIL PROTECTED]"\n";
$message = "some message";

if (mail($to, $subject, $message, $header))
{
    echo "message sent";
}
else
{
    echo "error, not sent";
}

but if you have problems with $_POST, maybe some code (your form and your script) 
could help.
