I prefer LinuxPPC personally, although there are several distributions
available. I recommend using a separate drive for the install, to avoid
confusion and leave your Mac OS9 system intact.
If you are going to go this far, though, you should consider MacOS X. The
install is easier than linux, and building PHP with Apache isn't that
difficult. I would use a separate drive here as well.
