Do you have the following in httpd.conf:
# And for PHP 4.x, use:

AddType application/x-httpd-php .php
AddType application/x-httpd-php-source .phps
NB .php NOT .php4
Otherwise consider have php as a DSO then you can rebuild PHP without
rebuilding Apache.
