That's a bit of a can of worms :) Everyone has different preferences. Ubuntu or debian are good choices (ubuntu is kept more up to date, the debian-stable branch only gets updated with security releases between major versions). Fedora is easy to use and set up. They are both package based systems so unless you have a very specific need from a package (eg with php you need the 'pcntl' functions) you don't need to compile anything from source.
