The fact that you cannot post any data to your installation of PHP somewhat highlights the fact that either PHP or your web server configuration are most certainly *not* working fine at all. You already know it's nothing to do with your code, you've tried various pieces of other code (including some from myself) and each and every time it shows the same thing - you cannot post data to your scripts.
