Do you mean you want them to be able to say how long a text field should be?
If so, try this:

for ($i=0; $i < $fields; $i++)
{
        $fieldName = "field$i";

        echo "<tr><td><input type=text name=\"$fieldName\"
        value=\"${$fieldName}\" size=\"$size\">\n";
}

$size would be a form parameter that you allow the user to set along with
the field name and value.
