why not str_replace('"','|', $describe);
?
 this gotta work ...

Let says I strip the slashes.. so it goes back to just normal qoutes.. and
then do the str_replace("\"","|", $describe);

$describe = stripslashes($describe);
str_replace("\"","|",$describe);

It doesnt replace the qoutes..
