Thanks both Sergio and Noury, I'm not a big fan of the pharo launcher, but I'll give it a chance. Anyway I found that the problem to run multiple VMs is a constraint of macos, see https://www.totalphase.com/support/articles/200349376-multiple-application-instances-on-mac-os-x/ so if you want to run a couple of pharo.apps you should run them via terminal: open -n "/mypath pharo.app"
