I don't know if this will always work, but with current implementations
of PL/pgSQL you can do this:

CREATE FUNCTION bit2text(bit) RETURNS text AS '
BEGIN
    RETURN $1;
END;
' LANGUAGE plpgsql IMMUTABLE STRICT;
