Ubuntu 9.10 isn't LTS, but it's served me just fine. I have a server that's not been rebooted since July 2010 (including a database-using application process that has been running since boot, and is in constant use), and I don't feel like bringing it down to bring it up to date! Really, any of the main-stream Linuxes should be fine.
