With one group, I started doing a "zombie photo" of the group as an inside joke. I eventually noticed that after doing something silly, people would always look more relaxed and happy in regular group photos after doing something silly or cheering to get the group energy up. The important thing is to make sure that everybody understands that it is time to stop doing the silly things for the "serious" photo.

Similarly, when doing portraits of a couple, I noticed that they just wouldn't/couldn't relax, so I had them make out for a bit, and that was great for getting them in a happier more relaxed mood.
